Mini-pizza
Basic recipe for pizza dough
375 g flour
½ cube fresh yeast (22 g)
190 ml milk
½ – 1 tsp salt
1.5 tsp sugar
1.5 tbsp olive oil
Directions
Put the flour in a bowl and make a depression in the middle. Crumble in the yeast and mix with a little
lukewarm milk and sugar, then let rise for 30 minutes. After this time add the remaining milk with the salt
and the oil and mix until the dough pulls away from the edge of the bowl. Cover and let rise about 1 hour.
Sprinkle some flour on the work surface and roll out the dough to the desired thickness (2 – 4 mm) and
then cut out.
Basic recipe for tomato sauce
2 cans chopped tomatoes
2 cloves garlic
1 medium onion
1 dash balsamic vinegar
1.5 tbsp tomato paste
1 pinch sugar
Freshly chopped basil and oregano
Pepper, salt
Directions
Dice the onion and garlic finely, sauté until clear. Then add the tomato paste. Sprinkle sugar over the top
and let it caramelise. Splash in the balsamic vinegar. Add the tomatoes and simmer over medium heat
until the sauce thickens. Add the chopped herbs and season with freshly ground pepper and salt.
Pizza with mixed mushrooms
E.g. chanterelles, porcino mushrooms, champignons or white truffles (whatever is in season)
Garlic
Chili powder
Buffalo mozzarella
Butter
For the mushroom mixture, slice the garlic and mushrooms thinly. Melt some butter in a skillet and toss
in the mushrooms with the garlic. Season with salt and chili powder. Press the dough into the pan and
spread on the remaining butter from the skillet. Spread the mixed mushrooms on top. Top the mini-pizza
with mozzarella slices. Bake in the PizzaRaclette6.
