The whole machine must be dusted to prevent accumulation of dirt which could get into the
dough.

For cleaning, use ordinary domestic detergents and rinse thoroughly with water.

To remove scale, use a plastic scraper or a soft plastic brush.

Do not use jets of water or compressed air; the former reduces the life of the machine and the
latter generates flour dust and is therefore a health hazard.
