7.8 Programming
To program, you must first:
Select a control probe
By setting the control probe, we determine which will be the reference
(water or product) of temperature and time established in each step.
• Water temperature probe
By selecting this probe, time and temperature parameters established in
the program steps will refer to the autoclave water.
• Product or “heart” temperature probe
By selecting this probe, the time and temperature parameters established
in the program steps will refer to the heart of the food product.
The “heart” probe indicates the product temperature in
real time and is used to calculate the Fo value.
Select the “end of step” condition
Determine the condition to end the «step».
• Finish the step by Fo.
When the desired F
0
value is reached during the step, it goes to the next
programmed step.
• Finish the step by Time.
Runs the step set time.
In order the autoclave calculates the correct Fo value (sterilization
or pasteurization value), it is necessary that the product probe is
inserted inside the package. This does not mean that the selected
control probe must be the product probe, even if the water probe
as a control probe. If the product probe is inserted in the bottle,
it will always calculate the Fo value by default.
ATTENTION
All programs must be validated by a food technician to
ensure that:
• The program provides the conditions for the sterilization
or pasteurization (on depending) of the samples.
• The program is designed to deteriorate, at a minimum,
the desirable characteristics of the samples such as color,
taste, texture, ...
PROGRAM:
A program is formed by:
• Set the initial temperature of the water.
PRE
• Set, if necessary, the purge parameters.
PUR
• «Steps» of heating the samples with
temperature, time or F

• Maintenance step (Temp, time or F

• “Steps” of cooling the samples with
temperature, time and pressure.
• Program parameters.
• General configuration parameters.
• Selection of the reference probe.
• Selection of the end-of-step condition.
RECOMMENDATION:
The equipment works by programs. Create a
test program to familiarize yourself with the
equipment.
A program consists of several steps:
First step: (PRE) Water pre-heating temperature
This step heats the water in the autoclave to be hotter than the product
temperature. The aim is that at the beginning of the autoclave water
shower on the product, it won’t be colder and this cools the product, just
the opposite of the desired effect.
