Cleaning the pan tub
4.1.1
Removing fried residues/remains
Preparatory work
.
Turn off appliance and let it cool down.
.
Insert the Gastronorm container into the
guide up to the stop or push the emptying
cart with Gastronorm container under the
drain hole.
.
Remove rough fried remains with a cleaning
scraper and kitchen roll.
.
Remove metal cover sheet, insert drain plug
and close drain tap.
Cleaning
.
Fill the still warm pan tub with approx. 10
litres of water.
.
Add rinsing agent and vinegar cleaner and
clean with a cleaning brush or with a stain
less steel pot cleaner.
.
If necessary, allow the cleaning solution to
boil briefly.
.
Drain off cleaning residues into the Gastro
norm container: Clean the drain pipe tho
roughly with a round brush while draining the
rinsing agent suds.
.
Clean drain plug and metal cover sheet in
the dishwasher or by hand with a grease-
cutting cleaning agent.
.
Remove dark spots on the surface with a
vinegar cleaner and a stainless steel pot
cleaner.
Rinsing and rubbing dry
.
Rinse pan tub and drain pipe thoroughly with
water and rub dry.
.
Spray pan tub with food quality maintenance
emulsion. Distribute the maintenance emul
sion evenly with kitchen roll.
