375 ml (1-1/2 cups)
long grain rice
15 ml (1 tbsp.)
vegetable oil
1 small
onion, chopped
1/2
green pepper, chopped
250 ml (1 cup)
sliced water chestnuts, drained
30 ml (2 tbsp.)
soy sauce
4 eggs,
beaten
Cook rice in Rice Cooker.
Heat oil in 25 cm (10”) skillet until hot. Cook onion and pepper in oil about
3 minutes, stirring occasionally, until onion is tender. Stir in cooked rice, water
chestnuts, mushrooms, Soya sauce and eggs. Cook over low heat 5 to 7 minutes,
stirring occasionally, until eggs are set.
Makes 5 or 6 servings
