This is a cycle of forced-air ventilation that can be activated with the door closed and for a duration set by parameter 

u13. If the door is opened during drying this does not affect the cycle.  

The cycle stops when the prescribed time has elapsed or when the 

 key is pressed.

Retarding proofing 

 

Pressing this area enables selection of a proofing cycle. This function can only be enabled if an expansion has been set 

(parameter E12).

Description of retarding proofing  

The controller provides complete control for retarding-proofing cabinets for bread or pastry by managing the complete 

dough retarding-proofing cycle automatically.
