3: OPERATING INSTRUCTIONS
3.1 Start-Up Procedure
Before lighting the fryer, make sure the fryer is OFF and the frypot drain valve is closed. Fill the
frypot to the bottom OIL-LEVEL line.
To prevent scorching, if solid shortening is being used, make sure it is tightly packed down into the
bottom of the frypot. Solid shortening should be melted at low temperature.
Operating the Gas Valve
The knob on the gas valve is placed in the PILOT or ON position by rotating it counter-clockwise. To
return the knob to the OFF position, the knob must be depressed slightly to disengage its stop tab, then
rotated clockwise.
