Recipe
This kind of doughnuts is a Danish speciality that people love to have around
Christmas with a glass of Glögg, but of course you can serve it all year round.
We give you below a basic recipe of good, old-fashioned Danish doughnuts.
You can adapt the recipe as to your own taste. The doughnuts can be frozen,
but the best taste is just after frying with a little sugar and jam on the side. To
make genuine Danish doughnuts you should put a small piece of apple in each
doughnut, before you turn them over for the first time.
Basic recipe of Danish doughnuts
(approx. 20 pieces)
3 eggs
3 tbs sugar
2.5 dl milk (full-cream milk)
2 dl cream
1 tsp sugar
4 dl wheat flour
2 tsp baking powder
Separate the egg whites from the yolks and keep them apart. Beat the egg
whites until stiff and foamy.
Whip egg whites, sugar, milk, cream and salt and next add wheat flour mixed
with the baking powder. Stir and add the whipped egg whites carefully. Pour
the batter in a mug and let it rest for about 1/2 hour. Bake the doughnuts
according to the instructions given in section “Use”.
Suggestions for spicing: Shred lemon peel, cardamom, shred orange peel, fresh
berries, bits of fruit, vanilla etc.
How to use the appliance
Position the appliance on an even and stable surface and plug to a wall outlet.
Press the on/off button and the signal lamp goes on. Wait for about 5 minutes
to make sure that the appliance has been heated.
Pour batter in the cavities to almost reach the edge. After about 1/2-1 minute,
give the doughnuts a quarter turn with a wooden utensil, e.g. a wooden stick
(never use metallic utensils). Bake for another about 30 seconds and give the
doughnuts a quarter turn and do so until they are completely round. The Danish
doughnuts are ready when they have a nice golden-brown colour. Check
whether the doughnuts are ready by inserting a dry wooden stick. If the batter
sticks to the utensil, the doughnuts are not yet ready. Always switch off the
appliance and unplug after use.
Take off the doughnuts and serve immediately with jam and icing sugar.
Cleaning and maintenance
Make sure that the appliance is unplugged and that the appliance is absolutely
cool before cleaning.
