Basic Cooked
Rye or Triticale Berries
1
cup rye or triticale berries
3
cups cold water, plus water to cover
Rye berries and triticale berries are very sturdy and require lengthy cooking times. If buying
berries in bulk, carefully sort through them to remove any small stones or debris. Rinse rye
or triticale berries well in cold water before using. Do not salt the berries until after they are
cooked, as salt slows down the absorption of liquid in the grain.
Place rye or triticale berries in a large bowl and cover with cold water. Let stand covered
overnight; drain. Place the inner pot into the rice cooker. Pour in 3 cups water into the inner
pot and press the “White Rice” button. Add soaked rye or triticale berries. Replace lid and let
simmer for 30 to 45 minutes, until tender.
