Basic recipe, dairy ice cream
3 pasteurised egg yolks
350 ml milk
70 g sugar
Slowly heat the milk until small bubbles
form. Whisk egg yolks and sugar until the
sugar has been completely dissolved.
Gradually add the egg mixture to the milk
and heat the mixture until it starts thicken-
ing. Leave the mixture to cool in the fridge
for about 2 hours. Pour the mixture into
the appliance while the paddle is turning.
Continue mixing until the sorbet has the
desired consistency.
Tip:
• Add blended fruit, grated chocolate or
other ingredients, as required.
• Depending on how creamy you want
the ice cream to be, you can replace
the milk either partially or wholly with
cream.
• You can also substitute yoghurt for
the milk to make yoghurt ice cream
instead.
Basic recipe, sorbet
200 ml water
200 g sugar
200 g blended fruit or 200 ml fruit juice
Pour the water into a saucepan, add the
sugar, and stir until the sugar is complete-
ly dissolved. Bring to the boil and allow to
boil for two minutes. Remove the sauce-
pan from the heat and allow the mixture
to cool. Add blended fruit/fruit juice to the
cold mixture. Then pour the entire mixture
into the bowl while the paddle is turning.
Continue mixing until the sorbet has the
desired consistency.
BANANA SORBET
4 portions
Ingredients
250 g bananas
100 ml lemon juice
170 g sugar
2 egg whites
Procedure
Mix the soft, ripe bananas with the lemon
juice and sugar.
Whisk the egg whites until they are stiff
and then fold in.
Then pour the mixture into the bowl while
the paddle is turning. Continue mixing for
around 40 minutes or until the desired
consistency is achieved.

200 ml whipping cream
70 g sugar
10 g vanilla sugar
40 g dark chocolate
