Game cooling and maturing
Say goodbye to tough and rotting game meat.. From now on,
you can cool and mature your hunted game yourself at home
thanks to the Landig game refrigerator.
Three proprietary technologies in the appliance guarantee a
perfect result without any prior knowledge or additional effort.
The benefits include quick cooling, reduced weight loss and
the option of a longer maturing and storage time.
Game – a tender indulgence from nature
Game is versatile and has many positive properties. This is
because wild animals experience less stress, which is evident
from the taste. It also has a smaller connective tissue structure
which makes the meat particularly tender. Provided that it was
given chance to mature after gralloching. Without ageing, any
piece of meat - whether game or not - will turn tough. After all,
it is only when the meat is matured that important enzymatic
processes are set in motion that make the muscle meat edible
for us.
An unstressed and naturally healthy piece of game that has
been killed cleanly and been correctly gralloched straight away
is ideal for meat maturing. Furthermore, furred game should
not be cooled down too quickly and also not too long after
being killed.
The length and type of maturation determines the taste and
consistency. Including preliminary ageing, the game can cool
and mature for up to 10 days. It becomes more tender and
gains in flavour.
Always ensure that you handle the game hygienically as this is
vital for achieving perfect results.
Good hunting and good luck!
