Marinated Pork Ribs
Ingredients
1 – 1½ kg pork ribs
Smoky Barbeque Marinade
3/4 cup barbecue sauce
1/2 cup tomato sauce
1/2 cup apple cider vinegar
1/3 cup brown sugar, firmly packed
1 tsp red chilli, finely chopped
1 tsp garlic, crushed
2 tsp smoked paprika
2 sprigs rosemary, crushed
100ml red wine (optional)
Method
• Combine the marinade ingredients in a large shallow dish and stir until smooth.
• Cut the pork ribs into chunks that will fit onto the grill plate.
• Smear the spice mix on the pork ribs and marinate, covered, in the refrigerator
for at least 4 hours.
• Preheat the barbeque on heat setting 5 and lightly oil the grill plate.
• When the grill has reached the set temperature, place the pork ribs onto the
grill plate and close the hood.
• Grill for about 20 – 30 minutes, or until the ribs are cooked through, turning the
ribs halfway through the cooking time.

250ml maple syrup
100g ginger, grated
100g garlic, crushed
1 – 2 tsp chilli powder
1 tsp salt
2 sprigs sage
100ml dark beer (optional)
