Pizza Oven Modes (Cont.)
Bread
■
This mode is best suited for artisan-style bread, cooked
without a loaf pan. The cooked bread will have large air
pockets and a crispy crust.
■
Place food on the cooking surface, not the oven rack
■
You will be prompted to select an oven temperature,
not a cooking surface temperature. Set the oven
temperature to the recipe recommended temperature.
■
The oven will move through a series of three steps, and
will prompt you to proceed where needed.
■
When using the Bread mode, prepare your loaves on a
piece of parchment paper on a pizza peel. This will make
them easier to slide onto and off of the cooking surface.

Bake
■
Place food on an oven rack, not the cooking surface.
■
You will be prompted to select a temperature. This will be
the temperature of the oven (not necessarily that of the
cooking surface).
Broil
■
Heat is delivered from the top heater only.
■
Food may be placed on the oven rack or the cooking
surface.
Pizza Oven Tips
Tips for Great Artisan and NY-Style Pizza
■ Use a pizza peel. Wooden peels are better than metal
ones for preparing the pizza before it goes into the oven,
since pizza dough doesn’t stick to wood as easily. Do not
store wooden pizza peel in your oven.
■
Lightly flour the peel to prevent the dough from sticking
to it. Avoid putting too much flour on the peel, as it will
change the crust flavor and may smoke when the pizza
is put into the oven.
■
After the dough has been placed on the peel, periodically
perform a “shake test” by lightly moving the peel back
and forth. If the dough sticks to the peel, add a bit more
flour.
■ Use low-moisture ingredients to prevent your slices from
getting soggy. If you make sauce from canned or fresh
tomatoes, strain the excess liquid from the sauce before
spreading it on the pizza. If using mozzarella cheese,
select a low-moisture version.
■
Top your pizza right before putting it into the oven. The
longer sauce sits on the dough, the more likely the
dough is to stick to the peel.
■
Avoid the temptation to put too many toppings on your
pizza. It will make it harder to slide it off the peel and
onto the cooking surface.
■
Watch your pizza like a hawk while it cooks. This oven
uses high heat to cook pizza quickly (~4min for an
Artisan pizza).
