Pizza Oven Modes

The upper oven of your Trattoria

TM

Pizza Oven has 4 special pizza cooking modes including Artisan, NY Style, Frozen,

and Pan. The cooking surface is designed to provide intense heat that is needed to make the perfect crust with the

versatility to use as a traditional double oven.

Artisan Pizza

■

This mode is best suited for Neapolitan-style pizza, with

a thin and soft crust with large air pockets and some

char on the bottom surface and edges. These pizzas

are best with just a few toppings, and regions of sauce

visible between toppings.

■

Place pizza on the cooking surface, not the oven rack

■

You will be prompted to select a temperature. This will be

the temperature of the cooking surface. We recommend

540°F

as a starting point. You may need to adjust the

cooking surface temperature based on the type of dough

used.

■

The oven will move through a series of four steps, and

will prompt you to proceed where needed.
