INGREDIENTS
2 tilapia fillets
½ lb. green beans, washed, ends cut, and
cut into ½” pieces
½ cup and 1 ½ tbsp extra virgin olive oil,
divided
3 cloves garlic, crushed
½ oz. chopped walnuts
8 oz baby kale, washed
20-30 fresh basil leaves, washed
salt and coarse black pepper, to taste
½ cup grated Pecorino Romano cheese
½ lb. penne pasta
DIRECTIONS
In a skillet, heat 1 ½ tbsp olive oil and garlic on low heat. Add walnuts and lightly toast
them. Set aside to cool. Combine kale, basil, ½ cup olive oil, salt, and pepper in a
blender or food processor and blend until smooth and creamy. When almost done, add
grated cheese and pulse a few times (be careful not to over blend the cheese).
Cut small slits into both sides of the tilapia fillets. Spread 1-2 tbsp of pesto sauce on the
tilapia and set the rest aside. Place the fillets in Basket 1. Spread out the green beans in
Baskets 2 & 3 so that they do not overlap. Steam for 6-8 minutes.
Meanwhile, cook the pasta in a large pot according to the directions on the pasta
package. Strain the pasta, return to the pot, and place over medium heat. Add the
remaining pesto sauce and stir until the pasta is coated in the pesto. Carefully remove
the tilapia and green beans from the Instant Steamer and serve with a side of pasta.
