Tea is grown and produced in different environments and requires diferent water
temperatures to allow its true flavour and aroma to develop during brewing. To bring
out the taste of more delicate tea leaves, a lower temperature is required. For example,
brewing green or white teas in boiling water will scald the tea leaves and the taste will be
bitter and unpleasant.
Brewing the tea for too long may also result in a bitter, unpleasant taste, while brewing
for too short a period may leave the tea bland. For best results always follow the specific
directions on the packet.
The following table provides a guide to some of the common tea varieties and their
recommended temperature settings. Flavour will always be a personal preference so
don’t be afraid to experiment with temperatures and brewing times.
