Ingredients
2 medium carrots
2 medium courgettes
1 egg beaten
½ tsp baking powder
50g parmesan cheese
40g flour
Method
1.
Spiralize the carrots and courgettes using the shredded spiral
blade.
2.
Using scissors cut the spiralized carrot and courgette noodles
into shorter lengths.
3.
Put the spiralized carrot and courgette in a bowl and toss with
½ tsp salt. Sit for 10 minutes.
4.
Squeeze out any excess water.
5.
Add the beaten egg and parmesan to the mixture.
6.
Mix together flour and baking powder and combine with the
mixture.
7.
Form into patties and fry on a medium low heat for 10-15
minutes or until golden brown.
