Ingredients
1 green raw papaya (small)
2 cloves garlic, finely chopped
1 red chilli, chopped
2 tomatoes, chopped
50g peanuts, crushed
Juice and zest of 1 lime
2 spring onions, finely chopped
Handful of bean sprouts
1 tbsp. mint leaves or Thai basil,
chopped
½ tbsp soft brown sugar
Method
1.
Slice the papaya lengthways and remove the white seeds and
peel the skin.

Using the long spiral blade, spiralize the papaya.
3.
Using a pestle and mortar or food processor, crush the garlic
and chilli to a pasta. Add the sugar, lime juice and zest, and mix
it with the spiralized papaya in a salad bowl.
4.
Wash the beansprouts and add to the salad bowl, with the
chopped tomatoes and spring onions.
5.
Prepare the dressing by mixing the all of the dressing
ingredients together, apart from the peanuts.
6.
Mix the together well.
7.
Taste, and add more lime, sugar or salt if needed.
8.
To serve, decorate with the chopped mint leaves or Thai basil,
and the peanuts

Green papayas are available in Asian stores. If you can’t find one, try substituting the papaya for
cucumber, courgette or unripe melon.
