натуральним і нещодавно приготованим. Це називається

культивуванням. Після п’яти процедур культивування використаний

йогурт втрачає активні ферменти й тому може давати йогурт

менш густої консистенції. Після цього необхідно почати знову,

скориставшись придбаним у магазині йогуртом або закваскою,

висушеною сублімацією.

Якщо ви прокип'ятили молоко, зачекайте, доки воно охолоне до

кімнатної температури, перш ніж додавати закваску.

Занадто висока температура може негативно вплинути на

властивості закваски.

Час ферментації

• Ферментація йогурту може тривати 6–12 годин залежно від

основних інгредієнтів і результату, який вам потрібен.
