Banana Cake with
Serves 10
Passionfruit Frosting
2¼ cups self raising flour
½ teaspoon salt
1 teaspoon cinnamon
½ teaspoon nutmeg
2 eggs
180g butter, softened
½ cup buttermilk
1½ cups raw sugar
1 teaspoon white vinegar
1 teaspoon vanilla essence
1½ cups very ripe mashed banana
1. Preheat oven to 180°C (160°C fan-forced).
Grease and line a 20cm baba pan.
2. Sift flour, salt, cinnamon and nutmeg into
a large bowl.
3. Using the processing bowl fitted with the
chopping blade, process eggs, butter,
buttermilk, sugar, vinegar, vanilla and
banana on speed 3 for 20 seconds.
(Mixture will separate at this stage but will
come back together when mixed with dry
ingredients).
4. Pour banana mixture into dry ingredients
and mix with a wooden spoon until
combined.
5. Pour mixture into prepared pan. Bake for
40 minutes or until cooked when tested
with a skewer.
6. Stand cake in pan for 5 minutes before
transferring to a wire rack to cool.
7. Spread cake with frosting and serve.
Passionfruit Frosting
150g cream cheese, softened
20g butter, softened
1 teaspoon vanilla
²⁄³
cup icing sugar mixture
¼ cup passionfruit pulp
Using the processing bowl fitted with the
chopping blade, process cream cheese,
butter, vanilla and icing sugar mixture until
smooth and combined. Transfer to a bowl and
stir through passionfruit pulp.
