Cleaning the machine
The machine must be kept in perfectly hygienic condition and cleaned at the
end of each shift and whenever the machine is to be left unused for more
than two hours. To clean the machine, proceed as follows:

remove the residues of dough and/or flour on machine parts, especially in
crevices, cavities and corners; remove the dirt with the aid of a vacuum
line. This operation must be performed every day, even inside areas that
are normally inaccessible, by removing safety guards fixed with screws
and only after having physically disconnected the electrical supply to the
machine (unplug the machine from the power socket!).
Do not use acid or alkaline solutions to wash away any soil on the machine.
Such solutions may damage machine surfaces. Use clean water only.
Careful daily cleaning is a pre-condition of long-term, smooth operation of
the machine, prevention of accidents in the work place, and high standards
of hygiene.
Caution
Never use metal scrapers to clean the machine, as these may
damage the surfaces. Clean surfaces with water only; any other sub-
stance which is not expressly authorised by the manufacturer may
damage the materials of which the machine is made and prejudice
smooth operation.
Caution!
The machine described in this use and maintenance manual com-
plies with legal requirements for food processing machines on the
date on which it is despatched by the manufacturer; continued com-
pliance over time may be deemed valid only if all due care is taken
over cleaning, which must be carried out at least every day.
The same applies to maintenance and checking of the machine:
immediately renew any part expected to come into contact with any
ingredient (dough, flour, water, etc.) which may be deteriorated, worn
or no longer suitable for treating ingredients in a correct and hygie-
nic manner.
The manufacturer shall accept no responsibility for damage arising
as a result of non-compliance with the above.
