Check the air holes at the bottom of the bowl to be sure they are not blocked.

Open the airslide in the base so the air can get in and the system can work like
a stove.

Ignite your fire with some matches and wait for 20 minutes.

After 20 minutes spread the wood through the bowl so the flames can get under
the plancha and heat it up quickly (because of the bowl a very good airflow is
generated which generates a quick startup).
After 20 -30minutes you can start with cooking, enjoying the heat and possibilities of
the plancha. The plancha will have a temperature of about 300 C so keep this in mind.
From now you can start grilling, cooking whatever you want. Depending on the
direction of the wind a part of the plancha can become hotter and cooler. The plate
gets warmer in the direction that the wind blows. You can use this during your cooking
session and can be very useful as it generates different temperature zones. For more

Never put something on the first shelf if the air slide is open. If the air slide is open ash
and small particles of the wood can fall on the shelf. This can be hot and cause fire if
something that can burn is places on the shelf.
5. Wood
It is important to use the right kind of wood if you work with the Quoco
®
. We advise to
work with wood of deciduous trees. The length of the wood should be between 25 and
30 cm. At the beginning don’t us very thick logs. Using thick logs makes the igniting
the fire process very difficult and hard to control the heat. Only use dry wood to avoid
a lot of smoke. The thickness of the wood to start up the fire should have a thickness
of 5cm max. As soon as it is burning you can use bigger woodblocks.
To avoid splashing coal we advise to use no pine wood. Pine wood will splash and
needs a lot of attention as hot coals can splash on the plancha or even on the terrace.
Never use waste, impregnated or painted wood. This contains toxic gasses which can
get into the air your food and will be very unhealthy.
6. Greasing the plancha
The plancha is made of carbon steel and needs to be greased before use. To grease
the plancha a tissue and a food grade oil is needed. After igniting the fire and cleaning
the plancha a bit of food grade oil should be put on a tissue. Rub the oiled tissue on
the plancha. A thin oil layer is created, and the oil will be burned into the metal. The
thin layer gives an oxidation protection and a nonstick layer to the plancha. The best
is to repeat the oiling process each time during start-up and after finishing. The plancha
should be cleaned (chapter 7) after finishing the cooking process before rubbing it with
the oiled tissue.
