Suggestions for meat and fish, as well as for vegetables for a Tatar Hat party.
Meat:
Veal: Filet, schnitzel, liver, kidney Pork: Filet, schnitzel, bacon
Beef: Filet, rump, entrecote
Lamb: Filet, cutlets, chops
Fowl: Turkey breast, chicken breasts fillets
Fish:
As you wish. Advantageously fish with firm flesh and not too many bones, e.g., turbot. Also suitable
are giant crevettes and scampi, discarding the shells, or lobster-tail medallions.
Vegetables (broth):
Carrots, leek, celery, fennel, soya germ buds, mushrooms.
Sauces:
All of the non-sweet quark combinations (herb, garlic), mayonnaise sauce with curry, tomatoes, chili,
mango chutney, ketchup, as well as the complete range of ready-made sauces.
Condiments:
Mixed pickles, marinated cucumbers, cocktail onions, corn-on-the-cobs, asparagus tips, fruit mustard,
and horseradish sauce.
To accompany:
Bread, garlic bread, crisps, rice
The Tatar’s Hat works like this:
• Fill the “brim” with previously prepared, hot vegetables or meat broth and sprinkle in finely cut
vegetables.
• After approx. 5 minutes, the necessary temperature is reached and the grilling fun can begin.
• Each participant hangs a piece of his or her food to grill, one after the other, onto one of the hooks
and leaves it there for as long as one likes. Begin with, e.g., 1-2 pieces of bacon. With this, the grill
surface becomes well-greased. For those who do not like bacon, the grill surface can be brushed
with a little oil.
• After 10-15 minutes, the broth is also ready to enjoy, and the vegetables are crisply cooked.
• The „soup“ becomes the delicacy because the meat juice exuded during cooking is caught by
the broth.
• No limits are set to the amount of creativity possible. Fish instead of meat, and in the brim bouilla-
baisse instead of broth; this can inspire every fish lover with any combination of ingredients.
