Borscht
Serves approx. 4
1 onion, diced
20 g butter
200 g finely diced beef
250 ml beef stock
200 g butter, diced
250 g white cabbage, shredded
200 g beetroot, grated
75 g leeks, finely sliced
1-2 tbsp red wine vinegar, salt to taste
150 g crème fraîche
1 tbsp chopped parsley
Method:
1. Place the onions, butter, beef and
stock in a dish. Cover, and cook for
5 minutes at 850 Watts.
2. Add the potatoes, cabbage,
beetroot, leeks, vinegar and salt. Cook
for 5 minutes at 850 Watts, and then for
a further 20 minutes at 450 Watts.
3. Squirl in the crème fraîche, scatter
with parsley and serve.
