7.1.2 TROUBLESHOOTING
THE OVEN DOES NOT COOK EVENLY
* The products to cook have been pressed too close to each other.
You should always check there is good air circulation between the products.
YOUR PRODUCT IS DRY AND IS UNFIT FOR CONSUMPTION
* Check whether the humidifier is working and whether the temperature is the right one for your product.
7.2
MAINTENANCE
Before doing any maintenance work you must cut off the electricity, gas and water supplies to the oven.
All the oven components, being subject to wear, are easy to reach from the right-hand side.
7.2.1
REPLACING COMPONENTS
CAUTION: Have this done by a skilled technician only!
Disconnect the gas, electricity and water supplies.
A) Electric components and electronic card
All the electric components and the electronic card are on the right-hand side of the oven.
In order to replace them, you therefore need to take off the right-hand side panel.
This is why the oven should be installed with sufficient clearance on the right-hand side.
B) Burners
- Take off the front door.
- Take off the front panel and the stainless steel plate of the combustion chamber.
- Remove the right panel.
- Undo the nut with a 25 mm wrench, keeping the nozzle-holder still with a 22 mm wrench.
- Undo the self-tapping screws of the burner flange.
- Remove the burner from the combustion chamber framework.
- Fit it all back together in reverse order.
- Check for gas leakage, with the soap solution method, on the gas connections that have just been tightened.
C) Detection device
- The flame detection devices are on the left-hand side of the combustion chamber, at the end of the burner.
- To access these devices you need to remove the left panel and possibly the back as well.
- Lift the front panel.
- Take out the liquid tray.
- Disconnect the wire of the detection device.
- Fit it all back together in reverse order.
D) Ignition devices
- Take these two devices out through the front cover of the combustion chamber.
- Disconnect the two high-voltage cables.
- Fit it all back together in reverse order.
E) Gas multi-functional valves
- Remove the right panel.
- Disconnect the wires of the power supply.
- Remove the thermocouple with a 9 mm wrench.
- Remove the nut of the gas pipe Ø 6 mm with a 10 mm wrench.
- Loosen the nut of the gas pipe Ø 14 mm with a 24 mm wrench and remove the flange with the O-ring (valve outlet).
- Remove the 4 screws with an 8 mm wrench (valve inlet).
- Remove the knob extension and take out the valve.
- Check whether the rubber gasket is still in a good state of repair.
- Fit it all back together in reverse order. Use the wiring diagram for the electrical connections.
- Check for gas leakage, with the soap solution method, on the gas connections that have just been tightened.
- Adjust the pressure at the nozzle as per the injector Table II.
- Fit the cap on the pressure regulator as per the injector Table II.
