Tips for convection baking

The amount of time you save will vary depending on the
amount and type of food you are cooking. When baking
cookies or biscuits, you should use pans with no sides or
very lows sides to allow the heated air to circulate
around the food. Using a pan with a dark finish will
produce faster cooking times.
When using convection baking with a single rack, place
the oven rack in position 3 or 4. If cooking on multiple
racks, place the oven racks in position 3 and 5. When
baking a cake, using the bake mode (not the convection
bake mode) will produce better results.
