Turkey Florentine

10-ounce packages frozen chopped spinach,
thawed, well drained

to 3 cups cubed or thinly sliced turkey

10'A-ounce can condensed cream of mush
room soup

tablespoons milk

tablespoons dry sherry.
1. Place spinach in a 2-quart glass casserole
covering the bottom of the dish evenly. Top
with turkey and season with salt and pepper.
Blend remaining ingredients until smooth in a
small bowl. Pour mixture evenly over turkey,
smoothing with a spoon, if necessary.
2. Cover and microwave at Power Level 10 for 10
to 15 minutes, or until heated through. Let
stand, covered, 5 minutes before serving.
Makes 4 servings.
Orange-Glazed Duck

cup frozen orange juice concentrate

cup water or fruit juice

beef bouillon cube

tablespoon packed dark brown sugar
1/4
teaspoon pepper

to 5-pound duck

1. Combine all ingredients, except duck, in a 2-
cup glass measure. Microwave, uncovered, at
Power Level 10 for 2'Ato 4’A minutes, or until
mixture is hot, stirring twice. Set aside.
2. Remove large lumps of fat from the front cavity
of the duck and pierce the skin thoroughly with
a fork. Place duck breast-side-down on a
microwave-safe roasting rack. Microwave,
uncovered, at Power Level 5 for 35 to 40 min
utes. Drain off fat.
3. Turn duck breast side up and brush with
orange glaze. Microwave, uncovered, at
Power Level 5 for 30 to 45 minutes, or until
duck is no longer pink near the bones. Brush
every 10 minutes with orange glaze. Let stand,
covered, 10 minutes before serving.
Makes 4 servings.
4 fish fillets(1 to 1 'A pounds)

cup dry white wine or tomato juice
3 tablespoons butter, cut into small pieces
2 tablespoons finely chopped green onion

teaspoon salt
'A teaspoon pepper
1. Arrange fish fillets in a small, shallow baking
dish, with thicker portions toward the outside
of the dish. Pour wine over fish. Not with butter
and sprinkle with chopped onion, salt, and
pepper. Cover.
2. Microwave at Power Level 10 for 5 to 10 min
utes, or until fish flakes easily with a fork. Let
stand, covered, 3 to 5 minutes, or until fish
becomes white and firm throughout.
Makes 4 servings.
