19. Use both handles to lift knife removal tool & knife away from slicer (Fig. 16-6).
20. With the knife securely attached to the removal tool, take the knife removal tool to sink.
21. Use the sprayer to direct water into the center hole of the knife removal tool for 10 seconds (Fig. 16-7).
Place all removable parts in a three compartment sink with warm water and a mild detergent solution; soak,
clean, and thoroughly scrub all surfaces using a solution of mild detergent and warm water. Removable parts
include: removable carriage, end weight, slide rod, knife cover, knife sharpener and knife removal tool with knife
installed.
Rinse removable parts with fresh, clean water. Following the instructions on your quaternary sanitizer label, soak
the removable carriage, end weight, slide rod, knife cover, knife sharpener and knife removal tool with knife
installed in a proper solution of quaternary sanitizer for a minimum of two minutes. Allow these parts to air dry.
An important step to kill bacteria is to allow the parts to air dry before reassembly!
After cleaning and sanitizing the removable parts, the rest of the entire slicer must be fully
cleaned, sanitized and left to air dry before reattaching slicer parts and using the slicer.
22. With a clean cloth soaked in mild detergent and warm water solution, wipe down all remaining surfaces of slicer to
remove food, debris and grease/oil. Use a nylon brush to scrub difficult areas.
23. Use a clean, wet cloth to rinse the entire slicer.
24. Finish by spraying sanitizer on all surfaces and then let air dry.
