SETTING CYCLE TIME

The required time for pressing dough will depend on the temperature of the dough when

pressing as well as the type and recipe of the dough and the set temperature of the press.

Separate times will need to be determined for varying thicknesses and dough ball sizes.

As a general rule, pizza dough at room temperature can be pressed for 3-10 seconds to

achieve desirable results. Pressing time for par baked pizza crust varies depending on

percentage of desired par bake. Begin trials at 45 seconds and increase or decrease time

until desired results are achieved. Tortilla and other unleavened/non-yeast doughs only

need to be pressed at room temperature for 2-3 seconds.

NOTE:  The analog versions are not quiped with a builtin timer.

ADJUST CYCLE TIME:

1.

Touch the time readout on the display. “UP” ▲ and “DOWN” ▼ arrows will appear on

the right side of the display and the cycle time value will start flashing and to indicate it

is in set mode.

2.

Press the “UP” ▲ or “DOWN” ▼ arrow to change the cycle time value. Holding down

on an arrow will change the time in 1 second increments for 5 values; then change to

10 seconds incremental changes.

3.

Once the desired cycle time value is set, either press the time readout to lock the cycle

time or simply wait for 2 seconds and it will lock in the new value automatically.
