Chicken and Vegetable Panini
Serves 4

Selector: Grill/Panini
4 Panini rolls
400g cooked chicken
300g ready marinated and roasted vegetables
100g mozzarella, grated
25g butter
Salt and freshly ground black pepper

Preheat the grill plates on High.

Open each Panini and butter. Divide the remaining ingredients evenly between each Panini and layer,
starting with the chicken, then vegetables and finally sprinkle with the cheese.

Season with salt and pepper and close each Panini.

Place the sandwiches on the lower grill plate. Close the lid, pressing lightly for 30 seconds and bake for
3-4 minutes or until the bread is golden and crispy and the cheese has melted.

Serve hot.
