COFFEE MAKING TIPS
Pre-heating cup or glass
A warm cup will help maintain the
coff ee’s optimal temperature. Preheat your
cup by rinsing with hot water and place on
the cup warming tray.
Heating the portafi lter and fi lter basket
A cold portafi lter and fi lter basket can
reduce the extraction temperature enough
to signifi cantly aff ect the quality of your
espresso. Ensure the portafi lter and fi lter
basket are preheated with hot water before
initial use. Wipe the fi lter and portafi lter
dry before dosing with ground coff ee as
moisture can encourage channelling where
water by-passes the ground coff ee during
extraction.
Single Wall Filter Baskets
The Single Wall fi lters (1 & 2 CUP) are
designed to be used with freshly ground
coff ee and allow you to experiment with
grind, dose, and tamp to create a more
balanced espresso.

the underside of the fi lter.
Advanced Dual Wall Filter Baskets
The Dual Wall fi lters (1 & 2 CUP) are designed
to be used with pre-ground coff ee and
regulate the pressure to help optimise
extraction and crema regardless of the grind,
dose or tamp pressure.

The Dual Wall fi lters have DUAL WALL
stamped on the underside of the fi lter.
The Grind
When grinding coff ee beans, the grind size
should be fi ne but not too fi ne. The grind
size will aff ect the rate at which the water
fl ows through the ground coff ee in the fi lter
basket and the taste of the espresso. If the
grind is too fi ne (looks like powder and feels
like fl our when rubbed between fi ngers), the
water will not fl ow through the coff ee when
under pressure. The resulting espresso will be
OVER EXTRACTED, dark in colour and bitter
in fl avour.
Coff ee Dose and Tamping
• Wipe
coff ee basket with a dry cloth.

If using Single Wall fi lter baskets, grind
enough coff ee to fi ll the coff ee basket.
You may need to experiment with the
amount of coff ee to achieve the correct
dose.

Tap the portafi lter several times to
distribute the coff ee evenly in the fi lter
basket.
•
Tamp down fi rmly (using approx. 15-
20kgs of pressure). It’s important to apply
consistent pressure every time.
•
As a guide to dose, the top edge of the
metal cap on the tamper should be level
with the top of the fi lter basket AFTER
the coff ee has been tamped. This will
minimise under or over dosing the coff ee.
