OPERATION
SHARP ROTATING BLADES

A. TO PROCESS PRODUCT
1. Have product prepared prior to using this machine by slicing to appropriate size.
• DO NOT
Tamper With, Bypass or Remove the Safety Cover, Interlock Switch or Toggle
Switch.
• ALWAYS
Turn Off and Unplug Machine From Power Source and Perform Lockout/Tagout
Procedures
BEFORE
Cleaning, Servicing or Attempting to Unjam or Unclog.
• NEVER
Leave Machine Unattended While Running.
• ALWAYS
Turn Off Toggle Switch When Not in Use.
• ONLY
Operate Machine by Using the Machine’s ON/OFF Toggle Switch.
• DO NOT
Wear Gloves While Operating.
• ALWAYS
Wear Wire Mesh Safety Gloves When Touching or Handling Stew Cutter
Attachments.

The dimensions of the feed slot in the Safety Cover are the
maximum
size of product which
can be processed.
NOTE B.
Position Rear Comb T3117 into one of the rear slots which is your processing requirement -
tenderizing or knitting. See illustration below.
The BIRO
Tenderizer
blades cut deep into the product to sever interconnecting tissue sinew. Two passes are all
that is needed with the BIRO-designed Tenderizer to create value-added product from tough, less expensive
beef, and hard-to-merchandise products.
You can easily have the Tenderizer perform the
knitting
function also by changing the position of the Rear
Comb/Stripper (as shown on the label).
Knitting
means to take two or three smaller pieces of meat
and transform them into one larger, more desirable “Cube
Steak.” Normally, these smaller pieces of meat are processed
in the meat grinder and sold as ground meat.
Since “Cube Steak” can be sold at approximately 50% more
than ground meat it makes sense to use the
Knitting
function
of the Pro-9 Tenderizer to “add value” to these lower cost
products. This “secondary” function will contribute toward
the payback of the unit.
The
Knitting
process is simple:
Place the Rear Comb Stripper into the rear-most slot (see above label). Combine two or three smaller pieces of
trimmings (or hard-to-merchandise meat) and pass them through the rollers of the PRO-9. Fold the product once
after each pass and turn it 90 degrees for the next pass. After two or three passes, you have created one val-
ue-added product - a juicy Cube Steak!
