GENERAL
• All ingredients should be at room temperature. lngredients that are too cold can make the pasta
dough brittle.
• The fresher the pasta is prepared, the better the taste.
• Light fringes or a rough surface of the noodles ensure that they can absorb the sauce better
later on. A 100% "smooth" pasta is an indicator of too much water in the dough.
• A high protein and carbohydrate content is particularly beneficial with wholemeal flour.
• lf the wholemeal dough starts to clump a lot whilst extrusion, a little flour can be added through
the refilling hole during operation.
• In general, all pasta form inserts can be used for all programmes, but the result varies
depending on the different dough consistencies. For example, gluten-free dough is always a bit
more brittle and therefore not ideal for lasagna.
TYPES OF FLOUR
• Depending on the manufacturer, the flour varies in quality and degree of fineness and is also
subject to natural production fluctuations. This might affect the quality of the pasta.
• It is best to use type 00 durum wheat flour for classic pasta. This type of flour is very fine and
has a high gluten content.
• Wheat flour type 405 and 550 and the use of wholemeal flour is also possible.
• As an alternative to wheat flour, flours made from spelt, chickpeas, chestnuts, buckwheat and
the like can also be used.
• As a flour substitute for gluten-free pasta or for pasta recipes with intolerances, you can
experiment with various mixes yourself. E.g. Rice flour, tapioca flour, potato and buckwheat
flour is suited.
The basis for good homemade pasta is the noodle dough. To make the dough succeed, stick to
