Mascarpone Cherry Waffles
Makes: 4 batches
2 cups plain flour
¼ cup caster sugar
1 tablespoon baking powder
½ teaspoon salt
1 cup milk
2 tablespoons vegetable oil
2 eggs
425g canned cherries, drained
200g mascarpone cheese, room temperature
1. Preheat waffle maker. Lightly coat plates
with oil spray.
2. In a large bowl combine flour, caster sugar,
baking powder and salt.
3. In a separate bowl combine milk, oil, eggs,
cherries and mascarpone.
4. Add the wet ingredients to the dry
ingredients. Stir until just combined.
5. Add ¾ cup of batter to waffle maker.
Ensure batter fills all grooves. Close lid.
6. Cook for 5-6 minutes or until golden and
crisp. Repeat with remaining batter.
Lemon Sour Cream Waffles

½ cup sour cream
2 tablespoons lemon juice
1 tablespoon lemon zest
2 eggs
80g butter, melted
1. Preheat waffle maker. Lightly coat plates
with oil spray.
2. In a large bowl combine flour, sugar,
baking powder and salt.
3. In a separate bowl combine milk, sour
cream, lemon juice, lemon zest, eggs and
butter.
4. Add the wet ingredients to the dry
ingredients. Stir until just combined.
5. Add ¾ cup of batter to waffle maker.
Ensure batter fills all grooves. Close lid.
