8. Maintenance
The maintenance must be a group of procedures that have
the objec ve of keeping the appliance in its best condi on
of opera on and increasing its life expectancy and safety.
* Cleaning – Check the item 3.3 Cleaning of this Manual.
* Electrical wiring – Check all the cables to avoid
deteriora on and all the electrical contacts about their
ghtening and corrosion.
* Contacts – Turn on and off bo om, emergency bo om,
reset bo om, electric circuits, etc. Check the appliance so
that all the components are working correctly and that the
opera on is working normally.
* Installa on – Check the installa on of your appliance
according to the item 2.1 Installa on of this manual.
1 - Items to be verified and implemented monthly:
- Check the electrical installa on;
- Check the outlet tension;
- Measure the opera ng current and compare it to the
Nominal one;
- Check all the eletrical terminal ghtening of the appliance,
to avoid bad contact;
- Check the possible clearance of the shi of the electric
motor;
- Check the wiring and the electric cable to avoid its
overhea ng, deficient isola on and mechanical breakdown.
2 - Items to be verified and implemented every 3 months:
- Check the electric components as ON/OFF Switch,
Emergency Bu on, Reset Switch, and eletric circuit
related to overhea ng, deficient isola on and mechanical
breakdown.
- Check possible loosens in the bearings
- Check retainers, o´rings, v´rings and other sealing systems.

3.3.2 Placing the rollers
- Each roll has its correct posi on in the roller support.
- Assemble the roll with the flange in posi on as shown in
Pic. 14.
- It is not possible to assemble the flange roll in the roller
posi on without the flange.
- Assemble the second roll in a second housing in the
combs holder as shown in Pic. 15.

- Note that the teeth on the face of each roller are facing
the respec ve sides
- Note the correct placement of the rollers, and the No. 1
tooth of the rollers must be inclined to the le side and the
teeth of No. 2 rollers must be inclined to the right side as
shown in Pic. 16.

3.4 Safety System
This equipment has a safety system that prevents the
equipment to start automa cally when the eletrcity is
restablished a er a temporary disconnec on. In this case
to reconnect the machine it will be necessary to repeat the
explained procedure in item 3.1 Star ng the Machine.
This equipment has a safety system to guarantee the
operator integrity. The equipment opera on must be
done according o the item “Opera on” in this manual.
Other procedures to operate the unsafe equipment, in this
condi on the equipment shouldn´t be used.
3.5 Cleaning and Sani zing
Unplug the machine before you start the cleaning
process.
Before removing the Protec on Lid No. 01 (Picture 01)
make sure the Rolls are completly stopped.No. 04 (Picture
01).
The equipment shall be totally cleaned and sani zed:
- Before being used for the first me;
- A er every day’s opera on;
- When it has not been used during a long me;
- Before opera ng it a er a long period that was not used.
Some parts of the equipment may be removed for cleaning,
such as:
- The Protec on Lid # 01 (Pic 01);
- The Combs # 02 (Pic 01);
- The Comb Support # 03 (Pic 01);
- The Rolls # 03 (Pic 02);
Clean all the parts that might get in to contact with the
meat with water and mild detergent, wash and dry before
assembling them. The other parts may be cleaned with a
damp cloth.
