CAPPUCCINO & LATTE

A Cappuccino is an espresso with hot milk and a frothy milk top. A latte is basically the
same only with more milk and less froth.

‡

Prepare your espresso as described above.

‡

Fill a small jug (preferable metal) with the desired amount of milk. As milk expands when
heated, and to allow additional room for the froth do not fill the jug more than two thirds
full. The jug must be deep enough to cover the end of the frother but without it hitting the
bottom of the jug.

‡

Do not try to make too much froth at one time. Too much steam will flatten the milk,
leaving you with nothing but hot, watery milk.

HEATING AND FROTHING THE MILK

‡

Set the Steam/Coffee mode switch to   (steam).

‡

Wait until the

 (Ready) lamp illuminates.

‡

Bring the jug containing the milk up to the milk frother and hold it so that the end of the
milk frother is just below the surface of the milk.

‡

Turn the steam control gradually anti-clockwise to release steam from the milk frother.

‡

Move the jug up and down slowly, keeping the end of the frother below the surface of
the milk.

‡

Do not lift the end of the milk frother out of the milk or it will spatter.

‡

When the milk has warmed to your liking and there is enough froth, turn the steam
control clockwise to close it. Do not overheat the milk or you may adversely affect the
flavour of the coffee.

‡

To make a cappuccino, pour the heated milk over the crema leaving some room in the
cup, then spoon the froth on top.

‡

To make a latte, fill the cup by pouring the heated milk over the crema.
