FRUIT PIES: 

Use canned pie fillings; apple, cherry,

peach are delicious. Place fillings between slices of
buttered bread as per our basic directions. Grill, then
sprinkle with sugar.

PUDGY PIE TREAT: 

Spread peanut butter on slices of

bread. Add one large marshmallow and one
chocolate bar square between the buttered bread
slices. Toast until golden brown.

PIZZA PIES: 

Place slice of pizza crust in cooker cavity,

add tomato, peppers, mushrooms, Italian seasoning,
mozzarella cheese and top with second slice of pizza
crust. Bread can be used in place of crust.

PIE IRON DESSERTS: 

Jams, preserves or fresh fruit are

delicious when spread between two slices of buttered
white or raisin bread and toasted to a golden brown.
Add sugar if desired.

MEATS

Cooking meats in a cast iron cooker can't
be beat. Pork, beef and poultry are all
simple to cook and can be grilled on both

sides with the cooker closed. (Do not use
bread when cooking meats) Please be
careful of grease dripping from the cooker

when turning over. Remember, the grease
drippings may flare up in the fire. When
cooking vegetable, nut or grain based

burgers you may wish to place a small
amount of oil in the Pie Iron. 
By unhinging the cooker you now have 

two small skillets.

EGGS

Use cooker in an open position as two
skillets to fry eggs, french toast, or bacon
and egg scramble. Use closed for delicious
omelets. Add cheese, onion, green pepper,
and paprika. Another good combination is
spinach and feta cheese added to the eggs.
For Mediterranean style gratins, add julienne
sliced summer squash (or potato), onion and
garlic to beaten egg mix. Also, add eggs to
hash brown potatoes or corn beef hash. For
huevos, add queso blanco cheese, tabasco
sauce and some cilantro to egg mix.

LUNCH

HOT HAM & CHEESE:

Place slice of ham and slice of cheese

on buttered bread. Add mayonnaise or mustard and
cover with second slice of bread. Close cooker and grill
to a golden brown.

SLOPPY JOES: 

Use canned, pre-cooked sloppy joe  mix or

make your own ahead of time with cooked hamburger,
BBQ sauce, and onion. (Meat must be pre-cooked) Try
ground turkey for a healthy taste treat.

BEER DOGS:

Place several hot dogs into cooker cavity

without bread. Add onions, sauerkraut, and beer. 
Close cooker and steam dogs until hot and plump.

TUNA MELT:

Mix canned tuna fish, chopped pickle,

mayonnaise and a bit of dijon mustard. Place on slice of
whole wheat bread, buttered side down, add a slice of
Danish havarti cheese and tomato. Cover with remaining
slice of buttered bread and grill until hot and toasty.

BACON FRANKS: 

Wrap a strip of bacon around several

frankfurters. Place into cooker cavity and cook without
bread until done. 

DINNER

CALZONE: 

Lightly coat the cooking cavity with olive oil.

Using either prepared pastry crust or pie dough, line the
inside cooker cavity. Fill with tomato paste (or pesto),
ricotta cheese, garlic & sliced charred red pepper strips.
Seal & cook over low heat.

MEAT LOAF: 

Coat inside of cooker with olive oil. To 1/3 lb.

hamburger add onions, BBQ sauce and spices. Make
patti sized to fit cooker cavity, close and cook over
medium heat (use no bread).

GRILLED STEAK:

Use no bread. Cut sirloin or cube steak

into strips. Add olive oil, spices, mushrooms, green
pepper, and chopped onions. 

SPICY QUESADILLA: 

Remove seeds & slice 1 poblano

pepper. Grill pepper in cooker with sliced onion, 1 diced
garlic clove & oil. Cook until onions and peppers are
soft. Spoon ingredients out of cooker into center of round
tortilla. Add salsa and shredded cheese of chice to mix.
Roll tortilla into shape that fits the pie iron. Place in pie
iron, close & cook.

BREAKFAST

FISH & SEAFOOD

SNACKS

Place 

fresh fish

fillets into cooker cavity. Add a little olive

oil or butter and season with spices to taste. Try adding
garlic, peeled tomatoes, onion, soy sauce or paprika.
Close cooker and grill until fillets flake easily with a fork.
add a few drops of beer or white wine to steam fish.

TUNA PATTIES: 

Combine one can of tuna, one egg, one

cup crushed crackers or bread crumbs and one half cup
chopped onion. Divide in half and form into patties. Put
patties in well buttered double cooker, close & cook over
medium/high, turn several times until crispy on outside.

SOUTHERN FISH FILLETS: 

Rub each fillet with olive oil, salt

and pepper. Lay 2 bacon stgrips in bottom cooker cavity
then add fillets. Sprinkle with parsley & cayenne pepper
and top with another two strips of bacon. Add splash of
beer, close handle and cook 3 to 4 min. on each side.

SHRIMP: 

First peel and devein shrimp. Add to cooker

cavity, sliced scallions and butter or olive oil. Close and
cook 2 - 3 minutes. Add white wine or vermouth, close
cooker again and steam over medium heat for another 3
- 4 minutes. Sprinkle with parmesan cheese and enjoy.

CAMPERS DELIGHT: 

Use any left over cooked meats (ham,

bologna, hamburger, turkey, etc..) Add cheese, spices,
and onion. Toast 3 or 4 minutes.

FRIED POTATOES & ONION: 

Place sliced potatoes in cooker,

salt and pepper to taste. Add chopped onions and olive
oil or butter. Grill over low heat.

BAGELS: 

Slice bagel length ways and butter. Place buttered

sides against cooking surface, latch handles and cook
until toasted.

SHORTCAKE: 

Using prepackaged biscuit mix, add extra

sugar and cook over low heat. Add fresh fruit &  a little
butter to baked biscuits. Bake again until fruit is hot.

CLEANING AND SEASONING BEFORE 1ST TIME USE

Before using the first time, your PIE IRON must be cleaned and seasoned.  This simple process will eventually give the
cast iron a non-stick finish, help prevent rust and make your time cooking all the more enjoyable.

1) New cast iron cookware is coated at the factory with a thin layer of paraffin wax to prevent rusting.  To remove the
coating, scour the cooker thoroughly with soap and hot water.  Dry completely after cleaning and begin seasoning
immediately, since the cast iron will rust if left uncoated.

Alternatively, you may heat the casting over your charcoal grill or campfire to melt off the wax.  Open the cooker and
heat with the inside facing down.  Cool and wash with hot soapy water.  Dry completely and begin your seasoning.

2) Season by coating the castings, inside and out, with a quality vegetable oil or solid shortening (do not use butter.)
Next, over a grill or campfire, heat at a moderate temperature for 15 minutes.  Wipe out the inside with a paper
towel, recoat and heat again.  After heating the second time, let the cast iron cool; recoat with oil one more time.

Your PIE IRON has now been pre-seasoned and is ready for use.

CONTINUING CARE TIPS

1) After each use, clean your PIE IRON with hot water and a soft brush or sponge.  A mild soap may be used, however
many cast iron aficionados feel that this may remove the non-stick finish developed from the pre-seasoning and
repeated use.  Expect cast iron to become darker with repeated usage; this shows that it is becoming well seasoned.

2) Dry completely with a towel after cleaning and apply a light coating of cooking oil to the castings to prevent rust
from developing during storage. You may want to place a paper towel between the castings to keep out moisture.
