1. Clean up the small conveyor(s) and the main
conveyor.
*
2. Clean up the window and the oven in general.
*
3. Clean up the breadcrumbs drawer.
*
4. Lubricate the main conveyor chain with high
temperature graphite based food grade oil.
*
5. Remove any excess flour or dust in the oven base.
*
6. Clean the axial ventilation fan in the oven base.
*
7. Apply a new layer of all-vegetable shortening on
each cooking plate. (Glazing)
