Pre Heating (Preparation)
Oven must be heated to the cooking temperature before baking baked goods. This process is called
preheating.
•
Pre heating in natural gas;
•
Switch on the poppet valve.
•
Set the oven temperature to the required degree.
•
Turn off the cooling switch.
•
Shut the oven’s door
•
Turn on the burner switch.
•
Wait for the oven to be heated.
Cooking
1.
Wait until it reaches to heat set from the thermometer.
2.
Place the baked goods in the oven by opening the door.
3.
Check that the trolley is positioned in the centering ball.
4. Check the trays’ settlement to the trolley.
5.
Deliver manual steam thereafter apply automatic steam in an amount equal to the time set.
6.
Set the time according to the characteristics of the bakery product (set the horn).
7.
Horn sounds when time is up and cooking is realized.
8.
Open the door when the cooking process is finished.
9.
Pull out the trolley after the rotary tray stops.
Cooking
To prolong the life of the materials on the oven, the furnace must be cooled at the end of each shift.
For cooling procedure;
1.
Open the door.
2.
Turn on the cooling.
3.
Turn off the time button and burner button.
4. Wait to reduce oven heat about 100 C.
5.
Leave the door half open when the oven heat reduces.
6.
Cut the circuit by turning off the poppet button at the end of the work.
Points to be Considered During Use
1.
Check whether there is electrical leakage from the coking cell door.
2.
Check the operation of the rotary assembly reducer.
3.
Check the steam aspirator operation.
4. Check the operation of the circulation fan.
5.
Check the loading ramp’s setting.
6.
Prevent the trolley from damaging the door seal when driving in and out of the oven.
7.
Prevent the trolley from damaging the inside of the door when driving in and out of the oven.
8.
Avoid contact with water when the door glass is hot.
9.
Do not stand opposite to the door when delivering steam.
10. Check possible leaks and congestions in fuel hoses.
