CHILLI BEANS WITH TOMATO SAUCE – Serves 6

390g, chopped finely
Celery stalk
150g, trimmed, chopped finely
Brown onion, small
1 (80g), chopped finely
Carrot, small
1 (70g), chopped finely
Fresh long red chilli
1, chopped finely
Tomato paste

Passata 700g
Chicken stock
180ml
Caster sugar
2 tsp
Canned cannellini beans
800g, rinsed, drained
Fresh flat leaf parsley
3 tbsp, coarsely chopped

WHAT YOU DO
Heat the oil in a medium frying pan; cook bacon, celery, onion, carrot and chilli, stirring,
until onion softens.
Add paste; cook, stirring, 1 minute.
Transfer mixture to the slow cooker. Stir in the passata, stock, sugar and beans. Cook,
covered, on low, for 8 hours.
Stir in the parsley; season to taste.
Serve with toasted sourdough.
