Mix eggs and sugar with a beater in a
saucepan. Add milk. Stirring constantly heat
the mixture to 195

cool to room temperature and stir in cream.

Bring milk in a pan to a boil. Beat egg yolks,
sugar and starch in a bowl until mixture is
nearly white. Pour the hot milk into mixture,
constantly stirring. Return mixture to pan
and heat, continuing to stir, until it slightly
thickens. Do not boil! Chill.
To this base mixture you can add:
