Closing Procedures
To remove frozen product from the cylinders:
1. Place the selector switches in the
"CLEAN" position.
2. Let the beaters run for 5 minutes. This
will allow the product in the cylinders to
soften.
3. Remove the pickup tubes from the mix
or bag adapters from the bags.

Very slowly
open the spigots and
dispense the semi-frozen product until it
quits. Use this product for making pints,
quarts, and/or novelties.
5. Close the spigots and place the pickup
tubes or bag adapters into a container
of cold water, allowing the MTS or pump
to fill and pressurize the cylinders.
6. Place a clean, sanitized container under
the dispensing nozzles.
7.
Very slowly
dispense the cold water.
8. Repeat steps 6 and 7 with warm water.
DO NOT USE HOT WATER. Dispense
until the water is clear.
9. Turn the selector switches and MTS or
pump switches to the “OFF” position.
Drain water from both cylinders.
10. Close spigots.
11. Prepare 4 gallons (15.2 liters) of
sanitizing solution for each cylinder.
Sanitizing solution must be mixed
according to manufacturer’s instructions
to yield 100 PPM available chlorine
solution (example: Stera-Sheen Green
Label). Use warm water (100-110°F or
38 to 43°C) to sanitize.
12. Insert the pickup tubes or bag adapters
into the sanitizing solution.
13. Place an empty container under the
dispense head.
9.1 Draining Product
At the end of each day of operation, the freezer must be rinsed and disassembled. The parts
must be washed, rinsed, sanitized, and prepared for reassembly
.
14. Open the spigots and open the air bleed
plugs by pulling up until the plugs touch
the bottom of the switch box.
15. Turn the pump switches to the “ON”
position. When sanitizer flows out the
spigot, leave open for 2 minutes, then
close the spigot.
16. When sanitizer flows out the bottom of
the head, close the air bleed plugs and
allow the cylinders to pressurize.
Important:
Do NOT use the “AUTO” position
with sanitizer or water in the cylinder.
The freezer will be damaged.
17. Place the selector switch in the
“CLEAN” position and allow the beater
to run for
5 minutes
.
18. Slowly open and close the spigots ten
times. Open the spigots and allow the
pump to push the sanitizer out of the
cylinder. Leaving the spigots open, turn
the selector switches to the “OFF”
position.
19. Leave the pump switches in the “ON
position and allow the pumps to push all
remaining sanitizer out of the cylinders.
When the sanitizer quits flowing, turn
the pump switches to the “OFF” posi-
tion.
CAUTION
Make sure freezer is
depressurized before proceeding.
