Curried Pork Chops

mushroom soup

1. Combine all ingredients, except pork chops, in
a mixing bowl and blend well.
2. Arrange pork chops in a 2-quart glass casse
role. Pour curry mixture on top. Cover.
Microwave at Power Level 5 for 15 to 25 min
utes, or until chops are tender. Let stand, cov
ered, 5 minutes before serving.

Sherried Chicken

to 3 pounds chicken pieces

large onion, thinly sliced

cup dry sherry

tablespoon soy sauce

tablespoon lemon juice

tablespoon flour
1. Arrange chicken pieces in a 10-inch round
baking dish with meatier, thicker portions
toward the outside of the dish. Sprinkle with
salt and pepper and top with onion and bacon.
Combine all remaining ingredients in a small
bowl. Pour mixture evenly over chicken.
2. Cover chicken with waxed paper. Microwave at
Power Level 10 for 16 to 19 minutes, or until
chicken is tender, turning the chicken over
after 10 minutes, cooking time. Let stand, cov
ered, 5 minutes before serving. Stir pan juices
until smooth and spoon over chicken.

Chicken Saltimbocca

whole boneless chicken breasts,
skinned, and halved lengthwise

large slices Swiss cheese, halved

cup thick tomato sauce or
pizza sauce

'A cup butter or margarine

cup fine, dry bread crumbs

tablespoons grated Parmesan cheese

tablespoons finely chopped
parsley
Makes 2 to 4 servings.
1 .Place chicken between sheets of waxed paper
or plastic wrap and gently pound until each
breast half is approximately 6X5 inches.
Discard wrap. Place a ham slice and half a
cheese slice on each breast half. Spoon 1
tablespoon tomato sauce on top and sprinkle
with thyme. Roll up breasts like jelly rolls and
fold in the sides.
2. Melt butter in a 9-inch square baking dish.
Combine crumbs, cheese, and parsley on a
plate. Dip chicken rolls first in butter, then in
the crumb mixture. Arrange rolls seam-side-
down in the baking dish. Cover with waxed
paper. Microwave at Power Level 10 for 8 to
12 minutes, turning and rearranging rolls after
5 minutes. Let stand, covered, 5 minutes
before serving. Serve with the pan juices.
