Remove two screws securing the high-limit 
mounting-bracket.  Do not disconnect wires from 
high-limit at this time.

Loosen and completely unscrew the compression 
nut, then the pass-through nut on the frypot bottom.  
Proceed to the next step before removing high-limit 
from frypot.

Remove high-limit mounting hardware.  Older pots 
may use a spring-bracket combination.  Newer pots 
will use mounting clips.  Retain mounting hardware for
