QUICK AND EASY CHICKEN CACCIATORE

6 oz. boneless skinless chicken thighs, cut into small bite-sized pieces
3 button mushrooms, sliced
1/3 cup sliced roasted red pepper
6 pitted kalamata olives, halved
2/3 cup marinara sauce
1/3 cup water
1 garlic clove, thinly sliced
Serving suggestions:
chopped parsley, grated Parmesan cheese, and
Cheesy Polenta (see recipe)
INGREDIENTS

In Removable Pot of Curtis Stone Mini Multi Cooker, add chicken,
mushrooms, roasted peppers, olives, marinara sauce, water, garlic,
and 1/4 tsp. salt. Stir to combine. Select Multi Cook function and
cook 30 minutes, or until sauce has thickened and chicken is cooked
through. Season with salt and pepper.

Serve with a sprinkling of parsley and Parmesan and over polenta, if
desired.
