Chicken Tom Yum Soup
Ingredients
Preparation
• Heat the oil in a pan and stir fry the chicken strips until cooked, leave until cool.
• Prepare the soup maker as instructed.
• Place all prepared ingredients in the jug and replace the lid.
• Place the cooked chicken and green beans inside filter and the rest outside.
• Select programme 2.
• When cooking is complete serve immediately, keep warm or re-heat when required.
Chilled Minted Pea Soup
Ingredients
Preparation
• Prepare the soup maker as instructed.
• Place all prepared ingredients in the jug and replace the lid.
• Place ingredients in the jug; do not use the filter for this recipe.
• Select program 2.
• When cooking is complete chill the soup, until you are ready to serve.
• Serve in small glasses with a little cream spooned on top and garnish with some pea
shoots.
1tbsp vegetable oil
6 spring onions, trimmed and sliced
300g skinless chicken breast fillets cut into thin strips
1tbsp tom yum paste
600ml chicken stock
150g green beans or mange tout Few small whole red chilli peppers, optional
1tsp caster sugar
Squeeze of lime juice
1tbsp fish sauce
Salt and freshly ground black pepper
Handful of fresh coriander leaves, roughly chopped
30g butter
3-4 shallots or 1 small onion, peeled and chopped
400g fresh peas
650ml vegetable stock 2-3tbsp freshly chopped mint
Pinch of sugar, optional
Double cream and pea shoots, to serve
