6.4.12 Temperature maintaining function

The 

temperature maintaining 

(

HOLD

function allows for maintaining of 
temperature of products after preparation.  

For example, the products after the night 
preparation are maintained in safe 
temperature until the setting is changed by 
the user.  

Set the hold mode by pressing the 
preparation mode key

Then set the temperature value (up to 120 °C) and the relative humidity value.  

Hint: 

In order to assure appropriate hygienic 

maintaining of temperature

 of products it 

is recommended to maintain the temperature above 60 °C and 

according to the local 

hygienic regulations

. Moreover it is required to set the humidity for the temperature 

maintaining between 20% and 30% for the roast meat and between 90% and 100% for 
stewing.
