When braising, proceed as above, but turn down
the heat setting even further. Fry for 8 – 10 min-
utes on each side with the lid closed. The cook-
ing time depends on the size and type of the food.
With this type of cooking, the meat fries in its
own juice and requires little fat. Nevertheless, be
careful with hot fat.
4.2| TIPS FOR COOKING WITH LITTLE WATER
This gentle form of preparation uses very little
liquid for cooking vegetables or other food in the
covered cookware. To prevent steam from escap-
ing and interrupting the water steam cycle, the
firmly closed lid must not be removed.
Cooking in little water is ideal for vegetables, fish,
poultry or the meat of young animals. With this
cooking method, vitamins, minerals and trace el-
ements are largely retained because they are not
rinsed out in the water. You can mostly refrain
from adding salt, as the inherent flavors of the in-
gredients are also preserved.
5| INSTRUCTIONS FOR
CLEANING AND CARE

After use, rinse with hot water as soon as possible.
•
Should food burn and stick despite taking the
proper precautions, remove blackened residues
immediately. To do so, bring a little water and
washing-up liquid to the boil in the cookware,
remove from the hob, allow any stubborn food
residues to soften and then gently remove them
with a soft sponge or brush.
•
Do not use any steel wool, scouring agents con-
taining sand or hard sides of sponges.
•
To remove stubborn stains use the liquid deter-
gent for Fusiontec cookware.
•
Fusiontec cookware is dishwasher safe. How-
ever, cleaning in the dishwasher can lead to dis-
coloration of the surface. This does not impair
function. We therefore recommend cleaning
by hand.
•
Dry the cookware and lid thoroughly after
cleaning.
•
Dry the cookware well before storing it.
•
Stack the pots and frying pans inside each
other, so that the handles sit on the rim.
•
Where possible, do not store the lid directly on
top of the cookware.
