egg cream Yoghurt dressing
Serves 4
Prepare a basic dressing as described in the
recipe for the herb yoghurt dressing.
Stir in 2 finely diced hard-boiled eggs and 1 tbs.
of chopped chives using a fork.
This dressing is ideal for potato salads.
Walnut cream Yoghurt dressing
Prepare a basic dressing as described in the
recipe for the herb yoghurt dressing.
Stir in 1 tbs. each of chopped walnuts, pine
nuts and pistachios using a fork.
This dressing is ideal for chicory salads.
cheese dressing
Serves 4
4 tbs. of cream, 4 tbs. of low fat yoghurt, 1 tbs.
of wine vinegar, 2 tbs. of dry white wine, 2 tbs.
of vegetable stock, salt, pepper
Emulsify all ingredients in the milk frother.
Stir in 2 tbs. of shaved Emmental cheese using
a fork.
This dressing is ideal for tomato salads.
