SECTION FIVE:
USING THE OVEN
Your Professional Range comes with a large two-piece broil pan.
The slotted grid allows drippings to flow into the lower pan, away
from the intense heat of the broil element, minimizing spattering
and smoking.
1.
Open the door to the broil stop position.

Press
BROIL
Selector button for the oven being used.

light turns on (12" Proofing Oven only).
3.
Set Thermostat to desired

Temperature.

The Cooling Blower turns on.

on control knob), medium

275˚F on control knob), or any setting in between.

Keep door open to the broil stop position throughout broil
cycle.
TO SET THE OVEN TO BROIL (Dual-Fuel PRDS Models)
Place rack in position recommended on page 29. For most foods that require
use of a non-preheated broiler, set food on two piece broil pan and place in
oven. For very fast cooking foods in which the broiler may be preheated for
no more than 2 or 3 minutes, place food and broil pan in oven after preheating
is complete.
BROIL
Only the upper electric element (PRDS Models) heats in
the BROIL mode.
SETTING BROIL
NOTE:
Successful broiling requires constant expo-
sure to infra-red heat from an electric element.
Preheating the broiler will cause the element to cycle
off sooner, reducing the effectiveness of the broil
process.
